Bacon and Cheddar Egg Bites

Recipe Ingredients:

  • 2-3 slices of One Mile Ranch Bacon (2 tbsp of bacon bits total)
  • 6 fresh eggs
  • 1/2 cup milk
  • 2 cups cheddar cheese, grated
  • 3 tbsp salted butter
  • Bernie’s Turbo spice

Directions:

  1. Preheat oven to 275°.
  2. Cook your bacon in the oven or a skillet until almost crisp. Crumble or cut into bits and set aside.
  3. Set aside 2 tbsp of grated cheese for later.
  4. Combine together the eggs, milk, bacon bits, and the rest of the grated cheese. Whisk well.
  5. Using a mini muffin tin, brush generously with melted butter inside each cup. Fill each cup to the brim then top with grated cheese.
  6. Bake for 15 min.
  7. Gently use a knife to loosen the outside of each egg cup to allow the bites to slide out easily.
  8. Eat right away or store in the fridge for 3-4 days in a sealed container.
