Recipe Ingredients:
- 2-3 slices of One Mile Ranch Bacon (2 tbsp of bacon bits total)
- 6 fresh eggs
- 1/2 cup milk
- 2 cups cheddar cheese, grated
- 3 tbsp salted butter
- 1/2 tsp Bernie’s Turbo spice
Directions:
- Preheat oven to 275°.
- Cook your bacon in the oven or a skillet until almost crisp. Crumble or cut into bits and set aside.
- Whisk the eggs in a mixing bowl very well. Then add milk, bacon bits, grated cheese and spice. Mix well.
- Using a mini muffin tin, brush generously with melted butter inside each cup. Fill each cup to the brim.
- Bake for 20 min.
- Gently use a knife to loosen the outside of each egg cup to allow the bites to slide out easily.
- Eat right away or store in the fridge for 3-4 days in a sealed container. (Makes 24 mini egg bites)
