Bacon, Avocado and Egg Toast

Ingredients:
  • 8 pieces of ONE MILE RANCH BACON
  • 4 pieces of sourdough bread
  • 8 fresh eggs
  • grated cheese -butter
  • Bernie's Turbo Spice -1 large, ripe avocado
  • juice of one lime
  • garlic salt
  • pepper
  • everything but the bagel spice (optional)
Directions:
  • Preheat oven to 400°F
  • Line cookie sheet with tinfoil and lay out the pieces of bacon on it.
  • Use a small sized baking dish and melt butter in the bottom. Then generously layer with grated cheese. Next crack the eggs into the dish keeping them relatively evenly spaced and sprinkle the Bernie's Turbo spice on top.
  • Place both the cookie sheet with bacon and the egg dish in the oven for about 18 min until eggs start to turn golden on the top and no longer jiggle and the bacon is just starting to crispen.
  • While the bacon and eggs are cooking, prepare the guacamole. Cut and peel avocado then place halves into a bowl. Squeeze the lime juice over the avocado and sprinkle with garlic salt and pepper to taste. Use a fork and lightly mash the avocado until desired consistency.
  • Toast the pieces of sourdough bread and when everything is ready, start to assemble.
  • Buttered toast first, then guacamole next, sprinkle with everything but the bagel spice, then layer with 2 pieces of bacon and add the baked eggs on top!
