Beef Gyros

Recipe Ingredients:

1.69 One Mile Ranch boneless crossrib roast
1 tbsp smoked paprika
1 tbsp oregano
1 tbsp cumin
1 tbsp thyme
½ tsp salt
¼ cup lemon juice
4 garlic cloves cut finely
1 sweet onion, diced
3 cups beef broth

Gyro toppings:
Lettuce, finely sliced
Cherry tomatoes
Red onion, finely sliced
Tzatziki sauce
Dill

Directions:

  1. Preheat oven to 325°F
  2. Combine paprika, oregano, cumin, thyme, and salt in a small bowl. Mix well.
  3. Pat down roast with a paper towel, then rub spice mixture generously all over the roast on every side.
  4. In a Dutch oven-style cooking dish, place the roast and add the diced onion and garlic around the roast.
  5. Pour the beef broth and lemon juice around the roast as well and cover with the lid.
  6. Cook for 4 hours.
  7. Once the roast is cooked, remove the meat from the pot and shred the meat. Return the shredded meat to the pot and toss in the sauce.

To serve:

In a pita wrap, add the beef, sliced red onion, tomatoes, finely sliced lettuce, tzatziki, and dill.
