Beef Wellington (ground beef)

Puff Pastry

Ingredients

  • 1 cup flour 
  • 1 tsp salt
  • 1 cup cold butter, grated
  • 1/4 cup ice cold water

 Directions

  • Whisk flour and salt together in mixing bowl.
  • Use a cheese grater to grate cold butter then mix into flour and salt mixture.
  • Make a well in the bowl and pour 1/4 cup of ice cold water. Don't over mix. Add 1 Tbsp of water if needed. 
  • Cover in saran wrap then let rest in fridge for 20-30 min.
  • Lightly flour surface and roll dough gently into a smooth rectangle. The length should be 3times the width. Keep edges straight and even.
  • Then fold the bottom third up and over as well as the top third to create a "Letter fold"
  • Give it a quarter turn and roll out again and fold in three again. Cover with saran wrap and chill for 20-30 min a second time.
  • Repeat these steps one more time (this step is optional) Chill once more then ready to roll out and use. 

Beef Wellington 

Ingredients

  • 2 eggs, beaten
  • 1.5 lbs One Mile Ranch ground beef
  • 4 Tbsp bread crumbs
  • 2 Tbsp parsley
  • 1 tsp OMR x Bernie’s turbo spice
  • 1 Tbsp milk
  • 3 Tbsp butter
  • ½ sweet onion, diced
  • 1cup mushrooms, chopped
  • 4 cloves garlic, minced
  • 1/2 cup beef broth 
  • 1 tsp fresh basil, chopped 
  • 1 cup mozzarella, shredded or sliced 

Directions

  • Heat oven to 400°F
  • Mix first 6 ingredients well, set aside.
  • In a cast iron pan melt the butter, Add onion and mushrooms. Cook on med-high until mushrooms sweat and onions are translucent. About 5 min.
  • Turn heat down to medium and add garlic, beef broth and basil. Turn too high and continue to cook until liquid reduces. Remove from heat.
  • Lay out puff pastry and cut 8 squares.
  • Spread mushroom mixture, then add mozza and then about 1/2 cup meat mixture in a ball on top (flattened)
  • Pull corners up over the meat and pinch edges together. (Tip: use a beaten egg as a "glue" to help hold seams together)
  • Put the finished bundles on a parchment paper lined cookie sheet.
  • Cut a small slit in the top of the pastry then add some milk to the beaten egg to create an egg wash and brush on top of each bundle.
  • Bake for 30-40min. until golden brown and meat is cooked through .
