Better than a McGriddle

Buttermilk pancakes

-2 cups flour
-¼  cup sugar
-1 Tbsp baking powder
-2 tsp baking soda
-1 tsp
-2 cups buttermilk (2 cups milk with 2 tbsp lemon juice)
-½ cup melted butter
-2 eggs
(maple syrup on hand to drizzle in pancake batter when frying)

Whisk the dry ingredients together in a mixing bowl. Mix wet ingredients in a separate bowl. Pour wet ingredients in the dry. Mix well, let sit for 15 min until it thickens.

In a cast iron skillet or a griddle, butter the surface and place greased jar lids on it. Scoop 1-2Tbsp of batter and then drizzle maple syrup on top and add another layer of pancake batter. When golden brown on the underside, remove jar lid and flip to fry the other side. Remove and set aside.


Breakfast Sausage Patties

-1lb OMR Ground Pork
-1 Tbsp brown sugar
-1  tsp salt
-½  tsp black pepper
-¼  tsp dried thyme
-¼  tsp dried rosemary

In a large bowl, stir the seasonings with the ground pork.

Scoop into 12 even balls and pat down to form into little patties (similar or slightly larger than the jar lid size)

Fry sausage patties in a skillet. When finished add cheddar cheese on top and melt.


Sheet pan Eggs

-12 eggs
-1 cup milk
-2 cups cheddar cheese, grated
-½ tsp Bernie’s Turbo Spice

Combine all the ingredients together in a mixing bowl. Whisk well. Line a large cookie sheet with parchment paper and then pour egg mixture  into the pan. Bake at 350° for about 15 minutes. When cooked cut into squares to fit into the small pancake sandwich.


ASSEMBLE the Mcgriddle

Place one small pancake on a plate, add the egg square then sausage with cheese. Top with a second pancake to form a breakfast sandwich.
