Recipe Ingredients:
- ONE-MILE RANCH BACON (crumbled into bacon bits)
- 8 medium yellow potatoes
- 4 Tbsp butter (melted)
- 1 /3 cup milk or cream
- 1 /3 cup sour cream
- Salt
- Coarse black pepper
- Shredded marble cheese
- Green onion for garnish (optional)
Directions:
- Peel the potatoes, cut them in half, and place them in a large cooking pot. Cover with at least an inch of COLD water, add a tsp of salt, and bring to a boil.
- Once the potatoes are boiling turn down to low and simmer for 15-20 min until the potatoes are fork tender.
- Drain water and place potatoes in a bowl.
- Add butter, milk, sour cream, salt, and pepper to the potatoes and mash. ( I use a hand mixer, which makes it so fast and easy)
- Once the potatoes have a nice creamy consistency, spread them into a baking dish or preferably a large cast iron pan.
- Top with a nice layer of bacon bits and then a generous amount of shredded cheese.
- Cook in 425° oven for 15-20 min until the cheese is nice and bubbly.
- Serve with sour cream and chopped green onion.
