Recipe Ingredients:
- 1 lb One Mile Ranch Chorizo
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- ½ yellow onion, chopped.
- 10 eggs
- 1 ¼ cup milk
- 1 ½ cups Shredded cheese
- 2-2 ½ cups frozen, diced hashbrowns
- ½ tsp salt
- ½ tsp pepper
- parsley for garnish
Directions:
- Preheat over to 350° and grease a 9x13 baking dish.
- Brown the chorizo in a frying pan then set aside.
- Next, add the peppers and onion into a frying pan and cook until just tender (about 5 min on medium/high heat)
- Whisk eggs, milk, salt, and pepper together in a bowl until light and fluffy.
- Assemble in baking dish. First the hashbrowns, then the chorizo, then the peppers, and onion mixture, and shredded cheese.
- Pour the egg mixture over the top evenly.
- Bake for 35-40 min until the top is turning golden!
