Chorizo Breakfast Bake

Recipe Ingredients:

  • 1 lb One Mile Ranch Chorizo
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • ½ yellow onion, chopped.
  • 10 eggs
  • 1 ¼ cup milk
  • 1 ½ cups Shredded cheese
  • 2-2 ½ cups frozen, diced hashbrowns
  • ½ tsp salt
  • ½ tsp pepper
  • parsley for garnish

Directions:

  • Preheat over to 350° and grease a 9x13 baking dish.
  • Brown the chorizo in a frying pan then set aside.
  • Next, add the peppers and onion into a frying pan and cook until just tender (about 5 min on medium/high heat)
  • Whisk eggs, milk, salt, and pepper together in a bowl until light and fluffy.
  • Assemble in baking dish. First the hashbrowns, then the chorizo, then the peppers, and onion mixture, and shredded cheese.
  • Pour the egg mixture over the top evenly.
  • Bake for 35-40 min until the top is turning golden!
