Recipe Ingredients:
- 1.5kg One Mile Ranch Beef Roast
- 2 Tbsp olive oil
- 2 Tbsp salted butter
- 1 sweet onion
- 4 medium carrots
- 8 small yellow potatoes
- 1 tsp minced garlic
- 1/4 cup flour
- 3 cups beef broth
- 2 tsp vegetable spice
- prime rib spice
Directions:
- Preheat the oven to 325°
- Pat down roast with paper towel and then season all sides of the roast with the prime rib spice.
- Heat the Dutch oven on the stovetop on high heat. Add oil and butter and once melted sear the roast for 2-3 min each side. After searing, remove the roast and set aside.
- Chop the carrots and onions then add to the Dutch oven and sauté for 2-3 min then sprinkle the flour over the veggies and stir well to coat them all.
- Reduce the heat to low and add the beef broth and stir well. The liquid will thicken as it reduces.
- Add the potatoes, garlic, and vegetable spice.
- Return the roast to the dish, you might need to wiggle it down between the veggies.
- Cover the Dutch oven and cook for 4 hrs or until the roast easily falls apart with a fork. The roast, veggies, potatoes, and gravy are all ready in one dish to perfection.
