Cut farmer sausage into 1inch pieces and fry in a cast iron skillet on medium-high heat until cooked throughout and nicely browned.
While sausage is frying, bring a salted pot of water to a boil and then add in perogies. Cook for 3-4 min or until they float to the top (don't over cook).
Strain the perogies and melt a generous amount of butter in another cast iron skillet. Once the butter is bubbling, add the perogies. Fry each side of the perogies until golden brown.
Once all the perogies are fried, keep in the cast iron skillet and add grated cheese on top and pop in the oven on HIGH broil for a few minutes until cheese is bubbling.
Slice onion in fairly thin strips and fry in a separate pan on medium-high until onion is caramelized.
