Recipe Ingredients:
Salad:
- Cucumbers
- Bell peppers
- Cherry tomatoes
- Red onion
- Feta cheese
- Fresh dill
Dressing:
- ¼ cup olive oil
- 1 tbsp vinegar
- ½ tsp minced garlic
- 1 tbsp honey, melted
- ½ tbsp lemon juice
- ⅛ tsp salt
- ½ tsp vegetable spice
Directions:
- Cut the cucumbers, bell peppers, cherry tomatoes all into similar sized cubes and place in a serving bowl.
- Dice the red onion into small pieces and add to the bowl as well as crumble the feta on top and mix well.
- Whisk together all the dressing ingredients until well combined. Drizzle over the salad.
- Finely chop the fresh dill and sprinkle on top.
(This is really good for leftovers as well so save any extra for tomorrow's lunch!)
