Greek Salad

Recipe Ingredients:

Salad:

  • Cucumbers
  • Bell peppers
  • Cherry tomatoes
  • Red onion
  • Feta cheese
  • Fresh dill

Dressing:

  • ¼ cup olive oil
  • 1 tbsp vinegar
  • ½ tsp minced garlic
  • 1 tbsp honey, melted
  • ½ tbsp lemon juice
  • ⅛ tsp salt
  • ½ tsp vegetable spice

Directions:

  1. Cut the cucumbers, bell peppers, cherry tomatoes all into similar sized cubes and place in a serving bowl.
  2. Dice the red onion into small pieces and add to the bowl as well as crumble the feta on top and mix well.
  3. Whisk together all the dressing ingredients until well combined. Drizzle over the salad.
  4. Finely chop the fresh dill and sprinkle on top.

 

(This is really good for leftovers as well so save any extra for tomorrow's lunch!)
