Recipe Ingredients:
- 2.5 cups One Mile Ranch Ham, diced
- 6 small potatoes
- 1/4 cup butter
- 1/4 cup flour
- 1 tsp salt
- 1/2 tsp pepper
- 4 cups milk
- 1/2 cup chicken broth
- 1/2 cup sour cream
- 1 cup grated cheese
- 1.5 cups frozen corn
Directions:
- Cook potatoes in an instant pot. (Peel and cut in half, add 1 cup water, click manual, and then 8 minutes on high pressure when the instant pot beeps, do the quick release).
- In a pot on the stovetop melt butter then whisk in 1 tsp of flour at a time until you get creamy, lump-free mix. Add salt and pepper.
- Let the mixture start to bubble, whisking constantly.
- Once it is bubbling, add in the milk and chicken broth and continue whisking.
- Adjust to the higher heat. Whisk every few minutes until the milk starts to thicken and bubble.
- Stir in sour cream, cheese, ham, and corn.
- Smash the potatoes to your desired texture and mix in.
- Serve with cheese and sour cream.
