Loaded Ham Chowder

Recipe Ingredients:

  • 2.5 cups One Mile Ranch Ham, diced
  • 6 small potatoes
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 4 cups milk
  • 1/2 cup chicken broth
  • 1/2 cup sour cream
  • 1 cup grated cheese
  • 1.5 cups frozen corn

Directions:

  1. Cook potatoes in an instant pot. (Peel and cut in half, add 1 cup water, click manual, and then 8 minutes on high pressure when the instant pot beeps, do the quick release).
  2. In a pot on the stovetop melt butter then whisk in 1 tsp of flour at a time until you get creamy, lump-free mix. Add salt and pepper.
  3. Let the mixture start to bubble, whisking constantly.
  4. Once it is bubbling, add in the milk and chicken broth and continue whisking.
  5. Adjust to the higher heat. Whisk every few minutes until the milk starts to thicken and bubble.
  6. Stir in sour cream, cheese, ham, and corn.
  7. Smash the potatoes to your desired texture and mix in.
  8. Serve with cheese and sour cream.
