- 8 Yellow potatoes
- Olive oil
- Salt and pepper
- Bacon grease
- Grated cheese
- ONE MILE RANCH thick cut bacon
- Green onion
Topping:
- Sour cream
- Parsley -garlic salt
- Salt and pepper
Directions:
- Preheat oven to 400°F. Line a baking sheet with aluminum foil and set an oven safe wire rack over the baking sheet.
- Scrub and rinse potatoes, dry with paper towels and pierce both sides twice with a fork. Place on the wire rack.
- Brush all sides of potatoes with olive oil. Bake in preheated oven until just tender (not squishy). About 45 minutes.
- Let potatoes cool and then cut in half and scoop out the centre leaving 1/4 inch of potato flesh intact. Brush both sides of potato with bacon grease and season with salt and pepper.
- Increase oven temperature to 450° and place potatoes back on wire rack upside down.
- Bake for 12 minutes. Remove from oven and flip to the opposite side, brush with bacon grease and bake for another 8 minutes until browned.
- In the meantime cook bacon and cut into bits. Also, mix sour cream topping ingredients together and cut green onions.
- When you remove potatoes from the oven, add a generous amount of grated cheese and return to the oven for 4 minutes until the cheese is melted and bubbling.
- Once finished add bacon bits, onions and a dollop of sour cream topping. Serve right away!
