Ingredients:
- 4 ONE MILE RANCH PORK CHOPS
- 1 Tbsp Chili Powder
- 2 tsp ground cumin
- 1.5 tsp dried oregano
- 1tsp salt
- 1 tsp course black pepper
- 2 tsp minced garlic
- 1/2 sweet onion, roughly chopped
- juice of a lime
- juice of an orange
Guacamole
- 1 large, ripe avocado
- juice of half a lime
- 1/2 tsp garlic salt
- 1/2tsp tajin spice
- chili powder to taste
- red onion, finely chopped
- cilantro (optional)
Directions:
- 1. Mix together the chili powder, ground cumin, oregano, salt and pepper
- Pat down the pork chops with paper towel then rub with spice mix all over each pork chop.
- Place pork chops in a crock pot and squeeze the juice of a lime and orange all over. Dump in the chopped onion and garlic and turn on high for 4-5 hours until the pork chops are easily pulling apart.
- When it is ready, remove the pork chops and take out the bones and any excess fat and shred. Return the shredded meat to the crockpot and mix into the juices.
- Prepare the guacamole by using a ripe avocado. Slice and remove pit then scoop into a small bowl. Pour in the lime juice and sprinkle with garlic salt, Tajin Spice, chili powder and add red onion. Stir or mash together to desired texture and add cilantro on top.
- Fry up your favourite tortilla and layer in the shredded pork, guacamole, and any other favourite toppings. We love adding tomatoes, feta and sour cream!
