- 1 lb. ONE MILE RANCH STEW MEAT
- 3 Tbsp butter
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 Tbsp ginger, grated (1tsp ground ginger)
- 5 Tbsp tomato paste
- 1.5 cups chicken broth
- 1 can coconut milk
- Rice/Naan to serve
- Optional: veggies to bulk up
- 3 potatoes, diced
- 2 carrots, diced
Spice:
- 1 tsp pumpkin spice
- 1 Tbsp smoked paprika
- 1 Tbsp cumin
- 2 tsp turmeric powder
- 1 tsp garam masala
- 1 tsp cinnamon
- 1 tsp salt
- Optional: chili powder
Directions:
- Mix spices in a small bowl and set aside.
- Melt butter in a Cuisinart stove top casserole dish and add in onions. Cook over mid heat until onions sautéed/clear. (approx 5 min.)
- Add in spice mix, garlic and ginger. Cook for 1 minute stirring constantly.
- Add in tomato paste, chicken broth, ONE MILE RANCH STEW MEAT, coconut milk and diced veggies (if using). Stir and bring to a simmer.
- Put a lid on and cook on low for 2-3 hours until stew meat is fall apart tender.
- Serve with rice and naan bread!
