Ingredients:
- 1.5 cups flour
- 1 tsp baking soda
- 2 tsp baking powder
- 1tsp garlic powder
- 2 tsp vegetable spice
- 1/2 tsp salt 2 eggs
- 2 Tbsp olive oil
- 1 cup Greek yogurt
- 3/4 cup One Mile Ranch bacon, chopped
- 3/4 cup grated cheese
- 1/3 green onion, chopped
- 1/2 cup cherry tomatoes, diced
Directions
- Preheat the oven to 350°
- Mix dry ingredients; flour, baking soda, baking powder, vegetable spice, and salt in a bowl.
- In a separate bowl, mix wet ingredients; eggs, olive oil, and yogurt. Then add wet mixture to the dry ingredients and mix well.
- Stir in the bacon, cheese, tomatoes and onions (reserve a bit of bacon and cheese for the tops).
- Put in muffin tins, add the remaining cheese and bacon to the tops.
- Bake for 20-25 min at 350° until a toothpick comes out clean.
