- 7 or 8 medium potatoes
- 1 medium sweet onion, diced
- 3 Tbsp butter
- 1 tsp minced garlic
- 1/4 cup flour
- 2 cups milk
- 1tsp salt
- 1/2 tsp course pepper
- 1 cup grated cheese
Directions:
- Preheat oven to 400°F
- Peel potatoes and slice thinly and evenly. Assemble by layering into baking dish.
- In a cast iron skillet, melt the butter and then add in the diced onion. Saute the onion on medium heat for about 4 min until translucent. Add in the garlic for an additional minute.
- Next, add in the flour and saute it for about a minute to cook out the raw taste. Pour in the milk and whisk until smooth. Season with the salt and pepper.
- Pour the sauce over the potatoes and top with a generous layer of grated cheese.
- Cover with foil and bake for 30 min. Remove the foil and bake for another 30 min until the potatoes are tender and the cheese is golden brown. ENJOY!
